Sounds nice. We just had pizza! Anybody any suggestions what I could do with an aubergine? I was using one for a photo shoot for my course - was trying to put together an arty still life composition! ;D Don't know what to do with it now - what do you do with aubergines??

Omg thats sooo weird, I took some shots of an aubergine last night and yes I had aubergine on my vegetable skewers!!!,,,Its one of my fave veggies and the shape reminds me of a guinea pig lol. There is a local Chinese take away that does a totally yummy aubergine and black bean sauce.
As for cooking I don't know many dishes. If your looking for something simple try the veggie skewers. Aubergines, red onions, mushrooms, green pepper.. Then in a small cup one third HP BBQ classic woodsmoke sauce and a dessert spoon of oil, mix and brush on the veggies. This was something my bro made and its simple and fabby.
Also there are plenty of lovely recipies online with aubergines if you don't fancy the skewers.
I have fond memories of an aubergine since childhood when the Indian neighbours we had made aubergine fritters....Crikey I am sad I can write an essay on an aubergine lol and never get bored.

Moussaka is always good to use up aubergines. Just use mince and make a cheese sauce. Its quite a simple thing to do.

Crikey I am sad I can write an essay on an aubergine lol and never get bored. Saying nothing... That is so weird that you had the same idea as me with the aubergines - we will have to compare our aubergine shots!!

Am I missing out on some great 'aubergine photo taking club' !! I make a nice veggie couscous dish with aubergine, chickpeas, courgettes and red pepper...very easy and I've done it so often I almost don't need the recipe now. I think the BBC Good Food website has lots of good recipes..including a lovely spicy parnsip soup..mmmmmmmmmmmmmmmmmm I find shopping for food and cooking hard when I'm not feeling well...but then again, everything seems like such an effort at those times. I just trduge round Tesco in my own little cloud. So thats when I usually make this as its easy and healthy and doesn't require much brain power!
